Tea cakes(:

Its been a while sense I have posted a project i have done, even though i have not posted them does not mean i have not been doing them, I've been doing plenty(:
A while ago I made teacakes, there is a story behind them! For the longest time me and my father have enjoyed our lovely friend Mrs. Moody's wonderful tea cakes. A couple of years ago we received the recipe, just to lose it a little while later in kitchen and recipe clutter, which was a devastating loss! Well the other day i was thinking, "I really want to bake something!" So i headed into the kitchen and took a few cook books to my room and began looking through them! I then turned to the dessert section of a church cook book we got a few years back, and began searching for a new yummy project. Only to find a tea cake recipe, i thought to myself "no teacake recipe could ever equal the quality of Mrs. Moody's!" but come to find out I looked down, and i read this. "Submitted by Diane Moody" I nearly fell off my bed! It really was her recipe! I was amazed at how we actually had the recipe all along and did not even know it!
Later that night i made them and they turned out wonderful!(: Here are some pictures!

They were wonderful!

Homemade Chicken Nuggets and Fries!

So yesterday our project was to make chicken nuggets and fries home made. Well mission accomplished soldier! They were delicious you have to try it out!

STEP 1: Cut the chicken into bite sized pieces. Set aside and discard any fat or undesirable pieces.

STEP 2: Prepare your workstation. Whip 1 egg, put bread crumbs in bowl, line baking sheet with tin foil (this reduces cleanup) and spray with cooking spray.

STEP 3: Coat chicken in egg.

STEP 4: Coat as evenly as possible in breadcrumb.

STEP 5: Place on baking sheet

STEP 6: Bake at 425 for 8-10 min, turning over halfway through.
STEP 7: Enjoy delicious homemade chicken nuggets!

I then decided that fries sounded good to go with it. So I made some.

STEP 1: Wash potatoes. (I did 3-4 for two people)

STEP 2: Cut the potatoes into slices then cut the slices any way you want.

STEP 3: I baked them at 425 F  for about 5 minutes then I deep fried them for about 10 minutes. Check them after the first 5 minutes.

STEP 4: Season and enjoy!

Thai Curry Spicy Chicken Minis

Yesterday my cousin and I decided we wanted to make something, so we made these.
My mom told us that we needed to think of a project everyday. So this was yesterdays.

Thai Curry Spicy Chicken Minis

Thai Chicken Mixture
1
tablespoon vegetable oil
1
lb boneless skinless chicken breasts, cut into bite-size pieces
1
medium onion, chopped (1/2 cup)
1/4
cup sliced green onions (4 medium)
1/4
cup chopped fresh cilantro
1/2
teaspoon Thai red curry paste
1
tablespoon fresh lime juice
1
cup shredded mozzarella cheese (4 oz)
Baking Mixture
1/2
cup Original Bisquick® mix
1/2
cup milk
2
eggs
Garnishes
1/2
cup salted cocktail peanuts
1/4
cup sliced green onions (4 medium, if desired)

  • 1Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
  • 2In 10-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 5 to 7 minutes, stirring occasionally, until chicken is no longer pink in center. Add onion; cook 2 to 3 minutes. Add green onions, cilantro, red curry paste and lime juice, stirring occasionally, until mixture is heated through. Cool 5 minutes; stir in cheese.
  • 3In medium bowl, stir baking mixture ingredients with whisk or fork until blended. Spoon 1 scant tablespoon baking mixture into each muffin cup. Top with about 1/4 cup Thai chicken mixture. Spoon 1 tablespoon baking mixture onto Thai chicken mixture in each muffin cup.
  • 4Bake 30 to 35 minutes or until toothpick inserted in center comes out clean and tops of pies are golden brown. Ten minutes into baking, carefully open oven and sprinkle 1/2 tablespoon peanuts on top of each muffin. Close oven door and finish baking. Cool 5 minutes. With thin knife, loosen sides of pies from pan; remove from pan and place top sides up on cooling rack. Cool 10 minutes longer; serve with sliced green onions.

I substituted jalapeƱo for the green onion cause we didn't have any green onion, and it worked out pretty good.

They turned out AWESOME! I loved them, you should try it.

About us!

This is myself (Becca-right), and my cousin (Misti-left). No I am not not mental, I'm just weird.(; Misti and I started this because my mom wanted us to.-_- Anyways you're probably wondering about how we came up with our name - Project: I'll Tell You Later. Well you see, my cousin and I have practically a million inside jokes, by now you may have figured out, that is one of them except we added the project in the title for I don't know what reason. We have the STUPIDEST yet most hilarious insiders. I have no idea what to write about, so this first post will be about me, Becca.

I love art, any kind and style.
Linkin Park is like the best band you will ever discover, and lifehouse they're pretty cool, I love any music really.
I like purple, purple is nice, and sometimes bright, so I like it.
Football is the most awesome sport ever!! Don't deny! ):< Cowboys own it!
Video games, hmmm, video games are awesome! Ever play Skyrim? No you say? Well get off you're lazy butt, go buy a PS3 if you don't already have one, then go buy Skyrim, THE MOST EPIC GAME OF ALL TIME! oh and GTA 4 is pretty cool. Tomb Raider, Tomb Raider is epic. Love that game. And others. Lots of others.
My mom takes a lot of random pictures... like say you're walking down the street and you see a dime in the road, she'll be like quick take a picture, or more likely to say, quick pick it up! She's weird, I "thankfully" get that wonderful trait... just kidding mom I love you :P
I am and will forever stay a Texan. Don't mess with Texas.

I guess I will write more tomorrow!(:
See ya! <3
